One of the things I love about skinny pizza dough is that it is so versatile. These skinny pizza dough blueberry danishes are the perfect sweet treat for breakfast.

My second cookbook is called Cooking for One. That doesn’t mean that you have to live alone to enjoy this book. While I am a widow with an empty nest, so many women reach out to me in a similar situation and say “why should I bother cooking just for myself?” Um, because you are worth it! Each recipe only serves one with no leftovers.
There are several recipes that use one ingredient (like a chuck roast) that morph into several different meals so that you don’t feel like you are eating the same thing over and over. That cookbook also has QR codes (and full nutritional information!) to the Weight Watchers App. It won’t matter if the WW plan changes, that QR code is evergreen and will tell you the exact WW points for the plan today – and the plan 10 years from now. Ingredients Needed for Blueberry Danishes
- skinny pizza dough – the dough can be made days in advance, as it is good in your refrigerator for up to 7 days
- blueberries (fresh or frozen)
- lime juice (I used a packet of True Lime – Hannah always has those at her house)
- non calorie sweetener – a couple packets of Splenda works great, or 1 tablespoon monk fruit, or non calorie sweetener of choice
- decorative sugar – I use Wilton brand that you can find in most grocery stores

Ingredients
- 1 cup blueberries (fresh or frozen)
- 1 tablespoon cornstarch
- 1/2 cup water
- 1 tablespoon non calorie sweetener
- 2 tablespoons lime juice
Instructions
Prepare the Cornstarch Mixture:
In a small bowl, combine the 1 tablespoon of cornstarch with 1/2 cup of water. Stir until the cornstarch is fully dissolved and there are no lumps.
Place a skillet over medium heat.
Add the 1 cup of blueberries to the skillet. Sprinkle the 1 tablespoon of non-calorie sweetener over the blueberries in the skillet. Stir gently to combine.
Pour the cornstarch and water mixture into the skillet with the blueberries and sweetener. Stir to mix everything together.
Continue to cook the mixture over medium heat, stirring frequently. The sauce will start to thicken as it heats up.
After about 3-4 minutes, the sauce should begin to bubble and thicken noticeably.
Once the sauce has thickened, add the 2 tablespoons of lime juice to the skillet. Stir well to combine the lime juice with the berry sauce.
Continue to cook the sauce for an additional 1-2 minutes, stirring constantly, until the sauce is thick and glossy.
Notes
On the WW plan, 1/2 cup of this sauce is 2 WW points. If you are on the regular WW plan, it is 0 points. Click here for the WW link.

Ingredients
- 8 ounces skinny pizza dough (recipe card below)
- 1 cup very berry lime sauce (recipe card below)
- 1 tablespoon decorative sugar
- 1 egg yolk + 1 teaspoon water for egg wash
Instructions
- Roll out the dough into two rectangles.
- Divide the very berry lime sauce between the two.
- Roll up lengthwise.
- Cut each rectangle in half.
- Starting at the bottom, roll the dough into a circle, pinching the dough together so it holds together.
- Place on baking sheet sprayed with avocado oil.
- Brush with egg wash and sprinkle with decorative sugar.
- Bake 18-20 minutes, or until golden.
- Let cool.
Notes
If you are on the WW diabetic plan, each danish is 4 WW points. If you are on the regular WW plan, each one is 3 points.
