This healthy cottage cheese quiche recipe is perfect for meal prep, and a way to use up any leftover veggies at the end of the week.
This recipe uses skinny pizza dough (click here for that recipe) but feel free to use store bought pie crust. The points and calories will be a bit higher with store bought crust however.
Ingredients Needed for Cottage Cheese quiche:
- pie crust – I used skinny pizza dough but store bought dough is great and can be found in the refrigerated section near the eggs and butter
- vegetables – I used spinach, but feel free to add your favorite veggies
- cheese – I try not to use fat free or low fat cheese because I think I get more flavor with good cheese and am able to use less
- milk – I used unsweetened cashew milk but any milk works
What makes cottage cheese a good ingredient for quiche?
Cottage cheese adds a creamy texture and additional protein while keeping the quiche lower in fat compared to traditional recipes that use heavy cream.
How do you prevent a cottage cheese quiche from being watery?
To avoid a watery quiche, drain the cottage cheese well before using it, and consider adding a small amount of flour or cornstarch to the mixture to help absorb excess moisture.
Can you use low-fat or fat-free cottage cheese in quiche recipes?
Yes, you can use low-fat or fat-free cottage cheese, but keep in mind that the texture and flavor might be slightly different. The quiche might also be a bit less creamy.
What vegetables go well with cottage cheese quiche?
Common vegetables that pair well include spinach, bell peppers, mushrooms, onions, zucchini, and tomatoes. These can be sautéed beforehand to reduce moisture.
Can cottage cheese quiche be made crustless?
Yes, a crustless cottage cheese quiche is a great low-carb option. Simply omit the crust and pour the mixture directly into a greased pie dish or baking dish.
How can you add more flavor to a cottage cheese quiche?
Adding herbs like chives, parsley, or dill, as well as spices like garlic powder, onion powder, or paprika, can enhance the flavor. You can also mix in some grated cheese like cheddar or Swiss.
How do you ensure the quiche is cooked evenly?
Bake the quiche at a moderate temperature (around 350°F or 175°C) and check for doneness by inserting a knife or toothpick in the center; it should come out clean. Cover the edges with foil if they start to brown too quickly.
Can cottage cheese quiche be frozen?
Yes, cottage cheese quiche can be frozen. It’s best to freeze it after baking and cooling. Wrap it tightly in plastic wrap and aluminum foil, and store it in the freezer for up to three months. Reheat in the oven until warmed through.
What are some protein additions that work well with cottage cheese quiche?
Proteins like ham, bacon, sausage, or smoked salmon can be added for extra flavor and protein content. Just ensure any meats are cooked before adding them to the quiche mixture.
Can cottage cheese quiche be made in advance?
Yes, cottage cheese quiche can be made in advance and stored in the refrigerator for 3-4 days. Reheat slices in the microwave or oven before serving.
