Lets get Bizzy in the Kitchen!
Have you ever watched an Instagram or YouTube video recipe and immediately want to make it? That’s what happened when I saw these lentil smash burger tacos from Tapped In Wellness on IG.
While you know I love my beef, these lentil smash burger tacos will be on heavy rotation this summer. Quick, easy, and if you have a blackstone these would be great to serve a crowd!
Ingredients needed for lentil smash burger tacos
- cooked lentils – did you know that you can buy lentils in a can? One can drained is perfect for this recipe. You can also cook down dry lentils if you wish
- bell pepper – we used yellow but any color works
- mushrooms – we used baby bella but any type work
- seasonings
- ketchup – if you use zero sugar ketchup the ketchup is 0 WW points
At a glance, doesn’t that look like a beef smash burger?! Â
Ingredients
- 2 cups lentils (I used 1 can of canned lentil)
- 1/2 cup bell pepper (we used yellow)
- 5 large mushrooms
- 1/2 cup quick oats
- 2 tablespoons ketchup (I used zero sugar)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon beef bouillon (optional but I think it adds a bit of beef flavor – leave out if you want to keep vegan/vegetarian)
- 8 corn tortillas
Instructions
- Process the peppers and mushrooms (and onion if using) and saute for 5 minutes. Let cool.
- Blend oats to make a flour. Add veggie mix and lentils to flour with ketchup and seasonings. Mix until combined.
- Divide mixture into 8 servings.
- Heat skillet with avocado oil spray over medium heat. Spread the lentil mixture on the tortilla, and place burger side down and cook for 3-4 minutes.
- Flip and add cheese (optional), and place a lid on the pan for the cheese to melt.
- Now top as you would your favorite burger! Thousand Island dressing, pickles, red onion, lettuce.
- Enjoy!
Notes
The lentil mixture is 0 points for 1 taco and 2 points for 2 tacos. The shells I am using are 1 point each, or 3 for 2 shells.
I ate one taco, so my taco without toppings was 1 WW point.
