If you’re like me, you love a dessert that feels indulgent but doesn’t derail your healthy eating goals. This Simple Apple Walnut Cake strikes that perfect balance—rich in flavor, packed with texture, and made with a few healthier ingredients. One of the stars of this recipe is the Fuji apple, which is my absolute favorite to bake with. Fuji apples bring the best of both worlds: they’re wonderfully crisp with a sweet-tart balance that makes them ideal for a cake that’s both satisfying and not overly sweet.
Fuji apples hold up beautifully in this cake, adding little pockets of juicy sweetness in every bite. Combined with the crunch of walnuts, it creates a cake that’s simple yet full of flavor. Luckily for me, Mariano’s had a 3 pound bag of Fuji apples on sale this week for only $1.99 – winning!
Why I Love Fuji Apples for Baking
When it comes to apples, Fuji is always my top choice. They have a dense, crisp texture that doesn’t turn mushy during baking. Plus, their natural sweetness allows me to cut down on added sugars while still getting that classic, slightly tart apple flavor. I’ve tried this recipe with other varieties, but Fuji wins every time in my kitchen!
Simple Method—Mix & Bake!
I know many recipes have you separate the wet and dry ingredients, but I like to keep things easy. For this cake, there’s no need to dirty extra bowls. Just toss everything into one large bowl, and mix gently until combined. The key is to not overmix—just stir enough so the ingredients come together.
Ingredients
- 2 cups flour
- 1/4 cup sugar
- 1/2 cup monk fruit sweetener (or your favorite no-calorie sweetener)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 eggs
- 2 tablespoons avocado oil
- 1 cup unsweetened almond milk
- 3 Fuji apples, diced (about 2 cups)
- 1/2 cup walnuts, chopped
- 1 tablespoon powdered sugar
Instructions
- Preheat your oven to 350°F.
- Grease a 9-inch cake pan or line it with parchment paper.
- In a large mixing bowl, add all of the ingredients—yes, all at once! Mix until everything is just combined. Don’t worry if the batter looks a little lumpy; that’s the secret to keeping the cake tender and light.
- Pour the batter into the prepared pan and bake for about 30 minutes, or until a toothpick inserted into the center comes out clean. Once cooled, sprinkle with powdered sugar.

Why you will love this cake:
I love that this cake satisfies my sweet tooth without going overboard on sugar, thanks to the mix of sugar and monk fruit sweetener. The apples and walnuts also add a dose of fiber, making this cake feel a little more wholesome without compromising on taste.
