Lets get Bizzy in the Kitchen!
Ingredients
- 2 low carb tortillas (see photo of above for the ones I used)
- 1/4 cup fat free refried beans
- 2 tablespoons Taco Bell sauce (divided)
- 3 ounces lean ground beef taco meat (I used 90/10 ground sirloin)
- 2 tablespoons nonfat Greek yogurt
- 1/4 cup diced tomatoes
- 1/4 cup shredded lettuce
- 1/4 cup diced red pepper
- 1 ounce cheddar cheese
- (optional: pickled jalapenos)
- cilantro for garnish
Instructions
Prepare the Base Layer:
Preheat your air fryer to 360°F.
In a small bowl, mix 1 tablespoon of Taco Bell sauce with the refried beans. Spread this mixture evenly over one tortilla.
Add the Fillings:
Layer the cooked taco meat over the refried beans.
Sprinkle diced tomatoes evenly on top of the taco meat.
Assemble the Pizza:
Place the second tortilla on top of the layers, gently pressing it down.
Prepare the Topping:
In a small bowl, mix the remaining 1 tablespoon of Taco Bell sauce with the nonfat Greek yogurt. Spread this mixture evenly over the top tortilla.
Sprinkle shredded cheddar cheese over the yogurt mixture, ensuring it covers the surface.
Top with pickled jalapeños (if using) and gently press down to ensure they stick to the cheese.
Airfry: (I built my pizza on parchment paper for easy transfer in and out of the air fryer)
Carefully transfer the assembled pizza to the air fryer basket.
Air fry at 360°F for 8 minutes or until the cheese is melted and bubbly.
Add Fresh Toppings:
Remove the Mexican pizza from the air fryer and let it cool slightly.
Top with shredded lettuce, diced red pepper, and cilantro for garnish.
Serve:
Slice into quarters and enjoy your delicious, homemade copycat Taco Bell Mexican pizza!
